My uncle's band does a kickass version of Whipping Post.
On the Elton John CD of covers, The Who does a version of Saturday Night's Alright For Fighting, and it rocks.
Sarah McLachlan does a Gordon Lightfoot song called Song for a Winter's Night. It's beautiful!
I can't think of any more right now, but those are my top 3.
